Losing her appetite

For several years I religiously have read the restaurant inspections. As a result, I rarely eat out.

Recently, there was the woman in Utah who drank sweet tea laced with acid and locally an employee who dipped celery in a sanitizing vat and then prepared it for use in food. There are always the habitual violations of standing water, bugs, mold, grease buildup, improper food storage and labeling, food not held at proper temperatures, equipment problems, improper hand washing, etc. These violations seem to range from basic ignorance to management indifference.

Some of the restaurants are chronic offenders. If the owner and/or manager doesn't know the rules, how can that person properly train the staff? And how many strikes does it take for a license to be suspended or a restaurant closed? Does someone have to die?

If filthiness is a shortcut to profitability, it's time to close some restaurants. Better yet, eat at home. You'll be healthier.
